I used a mixture of creamy chèvre, garlic-roasted kale, and nutmeg-seasoned roasted squash, but goat cheese, dried cranberries and pecans would be tasty. And, so would smoked cheddar, walnut and apple. Or, tomato, basil and mozzarella. And ricotta, bacon and fig preserves. Or feta, artichoke and sun-dried tomato. (You get the idea -- something on the sweet side, something salty, and something sharp/pungent.)
All you have to do is roll out the triangles and add a dollop of your mixture, roll them up into little balls and pat down into ovals on a greased baking sheet. Bake at 350, and about 12-15 minutes later, you're ready to go.
Voilà! A plate full of delicious last-minute treats everyone will love.
