It's almost nice enough to warrant some ice cream...but that would mean I would have to have some in the freezer, which I don't. (Boo.)
But, I did have some ripe bananas, so I made a lovely frozen treat using nature's ice cream -- frozen bananas. It's refreshing and sweet, and totally hits the spot. And it's kind of healthy if you ignore the peanut butter cups. But don't.
There's enough left to last the rest of the week...maybe the sun will stay around that long, too.
Peanut Butter Cup & Banana Freeze
Ingredients:
3-4 ripe bananas (peeled, sliced into rounds, then frozen)
1 tsp honey (if you discover your bananas are not quite ripe)
Handful of your favorite peanut butter cups* (unwrapped and coarsely chopped if large)
*Trader Joe's Dark Chocolate Peanut Butter Cups are delish!

To Do:
- Blend/process the frozen banana pieces on high speed, until smooth. Have patience. It will be crumbly at first, but then suddenly, it will transform into creaminess.
- Add in the honey, if using.
- Pulse in the peanut butter cups until combined.
- Enjoy right then and there (it will be similar to the consistency of soft serve ice cream), or for a firmer texture, pour the mixture into a freezer-safe bowl with a lid and freeze 30 mins - 1 hour.
- Scoop into bowls and drizzle with hot fudge, melted peanut butter, whipped cream or your favorite ice cream toppings.
- Go bananas!
