Sunflowers!

Chris and I ended up at a sunflower maze this past weekend, much to my delight. I've always loved those big, bright yellow, oversized wobbly heads -- they make me think of summer and sunshine. And blue skies and fields that go on forever.

I can't believe that this summer is almost over--where did the time go? In honor of these big yellow beauties, here are some fun recipes I've found that make the most of them. Let me know if you try any of them, or if you have a favorite sunflower recipe to add to the list:

  • Add sunflower seeds to your homemade (or store bought) granola.
  • Use sunflower oil in your homemade salad dressings.
  • Toast sunflower seeds and mix with almonds, dried cranberries, and dark chocolate for a great snack.
  • Toss sunflower seeds into your favorite stir fry.
  • Toss sunflower seeds into your favorite salad, better yet, toss in some sunflower sprouts, too!
  • Make chocolate bark and instead of nuts, use sunflower seeds.
  • Try using sunflower seeds instead of pine nuts in your next batch of homemade pesto.
  • Drizzle sunflower oil over pasta and top with goat cheese, herbs, toasted sunflower seeds, roasted garlic and grilled chicken.
  • Toast sunflower seeds and then grind them. Add some salt, pepper and minced fresh herbs. Use instead of bread crumbs. (Ex: Roll goat cheese into balls, coat them with the ground sunflower seed mix, then add to your favorite summer greens or serve as fun appetizer.)
