Some days, there's nothing more satisfying than a warm, gooey, flavorful sandwich. As far as I'm concerned, any sandwich combination will do as long as there's a crusty/creamy/crunchy element to each bite. Some people say it's the bread that makes a great sandwich, others say it is the filling-- I say it's the combination of both. You can't really have one without the other anyway, can you?
I recently hauled out the trusty panini maker and put it to good use, giving new life to some leftover bread, grilled chicken and fridge staples.
I sliced some crusty ciabatta bread and brushed both sides of each slice with olive oil. Then, I layered on slices of juicy grilled chicken breast, basil leaves (plucked from my herb garden), fresh mozzarella, and some smoky/sweet roasted red peppers. I drizzled a mix of balsamic vinegar and pesto on the top slice before closing and pressing the sandwiches into lovely, melty panini goodness.
A perfect snack, lunch or light dinner...easy, quick and of course, tasty, too!
